Zoodles Made Easy (aka: Zucchini Noodles)

Zucchini noodles (also known as “zoodles“) are a great gluten-free, Keto, Paleo and low-calorie, zucchini pasta. They are usually made using a spiralizer, julienne peeler or mandolin.

When I first tried zoodles in a restaurant.  I could not believe how much they tasted like pasta. I found it quite startling.  I am gluten-free and my family is not.  So, I wasn’t making many pasta dishes.  Until I found zoodles.

It is very important to get the right spiralizer. There are many on the market.  I highly suggest you purchase one that suctions to the counter.  Has more than one type of blade.  And has a rotating arm to spiral the vegetables.  Note this can be use for many kinds of vegetable.

When I first purchased a spiralizer, I went for the handheld ones.  I was so sorry I did.  I could never get it to work right.  Then I tried others that were failures too.  It was not until my family purchased a $30 one that I had success.

Cooking Instructions

Microwave: The fast way is to use a microwave. Pile the noodles in a microwave-safe dish and cook for one minute. Starting with 30-second increments, cook the zoodle.  Continue until you reach the desired softness. Then top/toss with your sauce.  Salt a bit, to bring out the flavor.

Sauté in butter or oil: I personally found this to be the most flavorful. Just add one tablespoon of butter, ghee, olive oil, avocado oil to a pan and sauté for 1-2 minutes.  Once the zoodles are covered in the melted butter or oil, I add about 1 tablespoon to ¼ cup of water. Depending how much I have.  The zoodle will release some water. Cover and steam until tender or al dente (between under cooked and cooked).  Salt a bit, to bring out the flavor. You can also toss with the butter water from the pan.

Sauté in water: for a lower calorie method, add one tablespoon of water to a pan and sauté for 1-2 minutes. Salt a bit, to bring out the flavor.
