Strawberry Mojito


  • 8 oz Rum
  • 6-8 oz Strawberry Lemon Simple Syrup (recipe below)
  • Mint leaves
  • Sliced strawberries
  • Lemon slices
  • 2-4 oz club or lemon-lime soda

Strawberry Lemon Simple Syrup

  • 2 cups water
  • 2-1/2 cups sugar
  • 1 cup fresh lemon juice
  • 1 quart (about 1-1/2 pounds) strawberries, cleaned and hulled and halved


Strawberry Lemon Simple Syrup

  • Combining water, sugar, lemon juice and strawberries in a medium saucepan.
  • Bring mixture to a boil. Stirring often.
  • Remove from heat once it reaches a boil, stir until all sugar is dissolved.
  • Allow syrup to cool.
  • Strain syrup and store in a Mason jar.
  • Refrigerator until ready to use.  Keeps about a month.


  • In a shaker mash a few strawberry slices and mint with a muddler.
  •  Add rum and syrup.  Shake until mixed.
  • Add ice to cocktail glasses.
  • Add mojito until glass is 3/4 full.
  • Top each glass with some club soda when ready to serve.
  • Garnish with strawberries and mint.
