INGREDIENTS
- 8 oz Rum
- 6-8 oz Strawberry Lemon Simple Syrup (recipe below)
- Mint leaves
- Sliced strawberries
- Lemon slices
- 2-4 oz club or lemon-lime soda
Strawberry Lemon Simple Syrup
- 2 cups water
- 2-1/2 cups sugar
- 1 cup fresh lemon juice
- 1 quart (about 1-1/2 pounds) strawberries, cleaned and hulled and halved
INSTRUCTIONS
Strawberry Lemon Simple Syrup
- Combining water, sugar, lemon juice and strawberries in a medium saucepan.
- Bring mixture to a boil. Stirring often.
- Remove from heat once it reaches a boil, stir until all sugar is dissolved.
- Allow syrup to cool.
- Strain syrup and store in a Mason jar.
- Refrigerator until ready to use. Keeps about a month.
Mojitos
- In a shaker mash a few strawberry slices and mint with a muddler.
- Add rum and syrup. Shake until mixed.
- Add ice to cocktail glasses.
- Add mojito until glass is 3/4 full.
- Top each glass with some club soda when ready to serve.
- Garnish with strawberries and mint.
